This colloquium will share the most recent and innovative insights about the origins of our foodways, and the connection between eating habits, culinary practices and the environment. A collective of visiting scholars and graduate students from UC Davis will address the intricate overlaps between commercial, scientific, political, and social systems involved in the historical production of food cultures that draw from agricultural practices, environmental protection initiatives, and the crop fields of Latin America to our very own dinner tables.
